Ingredients (2 servings):
Cold cooked rice – 2 cups
Oil – 2 tbsp
Green onion – 2 oz (separate white and green parts)
Chicken powder – 2 tsp
Eggs – 2
Soy sauce – ½ tbsp
Cooking Instructions:
Heat a pan or wok over medium-high heat. Once it’s warm, drizzle in the oil and swirl it around.
Crack in the eggs and give them a quick scramble right away so they stay soft and fluffy.
Toss in the white parts of the green onion. Let them sizzle and get fragrant for about a minute.
Add in the cold rice. Pour the chicken powder and soy sauce around the sides of the pan so they mix in gently as you stir.
Stir-fry everything together, breaking up any clumps of rice and letting the grains soak up all the flavor.
Once it’s evenly mixed, turn off the heat and stir in the green parts of the green onion for a fresh pop of color and taste.
Serve warm, preferably in your favorite bowl. Maybe with a side of kimchi, or just as is.
