Ingredients

  • Cucumber – 3.5 oz (100 g)

  • Carrot – 3.5 oz (100 g)

  • Ground pork – 4 oz (120 g)

  • Fried tofu skin – 3 oz (90 g)

  • Gochujang (Korean chili paste) – ½ tbsp

  • Sugar – ½ tbsp

  • Rice paper – 2 sheets

  • Seaweed sheets (nori) – 5 sheets

Instructions
  1. Cook the rice
    Steam the white rice and black rice separately. Once cooked, season with sesame oil and salt. Let the rice cool slightly before handling.

  2. Prepare the vegetables
    Julienne the pickled radish into thin strips. Julienne cucumber and carrot, sprinkle lightly with salt, then sauté over medium heat until just softened.

  3. Cook the tofu skin
    Slice fried tofu skin into long strips and sauté until lightly golden.

  4. Cook the pork
    In a pan, stir-fry ground pork with minced garlic, gochujang, and sugar. Cook until the sauce is absorbed and the mixture is dry. Set aside to cool.

  5. Assemble the inner roll
    Lightly moisten two rice paper sheets and overlap them on a cutting board. Place one filling lengthwise, roll tightly once, then add another filling. Repeat the process, rolling layer by layer until all fillings are enclosed. Cut the roll into 4 equal sections.

  6. Prepare the rice rolls
    Spread a thin layer of black rice on a sheet of seaweed and roll tightly. Repeat with alternating layers of black and white rice on two overlapped seaweed sheets.

  7. Final assembly
    Place the rice paper roll inside the layered rice-and-seaweed sheet, then roll tightly like classic kimbap. Let the roll rest for 5 minutes to set.

  8. Slice and serve
    Using a sharp knife, slice into bite-sized pieces to reveal the beautiful flower pattern inside.
