Ingredients (Serves 2)
300g pasta (spaghetti, linguine, or penne)
8 cloves garlic, thickly sliced
2 Tbsp butter
3 cups water
2 tsp salt
2 Tbsp gochujang (Korean chili paste)
1/2 tsp chicken stock powder (or bouillon)
1/2 Tbsp sugar
1 cup heavy cream
8 shrimp, peeled and deveined
1 cup shredded mozzarella cheese
Chopped scallions, for garnish
Instructions
In a wide pan, melt the butter over low heat.
Add the sliced garlic and cook slowly until golden and fragrant.
Pour in the water, bring to a boil, and add the pasta.
Season with salt and cook until about 60% done.
Stir in gochujang, chicken stock powder, and sugar until fully dissolved.
When the pasta is about 80% cooked, add the heavy cream and stir well.
Add the shrimp and cook until pink and tender.
At about 90% doneness, mix in the mozzarella cheese and let it melt into the sauce.
Plate the pasta and finish with chopped scallions on top.
