Ingredients
  • Rice paper

  • Kimchi

  • Sugar

  • Cheese (cut into ~5 cm pieces)

  • Cooking oil

Instructions
  1. Prepare the rice paper: Cut into rectangles, about 8 cm x 5 cm.

  2. Chop the kimchi: Cut into small pieces, about 2 cm x 2 cm, so it fits easily inside the rice paper.

  3. Slice the cheese: Cut into strips or blocks, about 5 cm long.

  4. Heat the oil: Warm cooking oil in a pan over medium heat.

  5. Soften the rice paper: Lightly wet one piece of rice paper with water.

  6. Assemble: Place a spoonful of kimchi on the rice paper, sprinkle a little sugar, and add cheese.

  7. Seal: Cover with another rice paper sheet to form a sandwich.

  8. Fry: Place the rice paper sandwich into hot oil and fry for about 20 seconds, until golden and crispy.

  9. Drain: Remove and place on paper towels to remove excess oil.

  10. Serve: Enjoy hot with your favorite drink. (My preference is beer with this!)
