Ingredients
Rice paper
Kimchi
Sugar
Cheese (cut into ~5 cm pieces)
Cooking oil
Instructions
Prepare the rice paper: Cut into rectangles, about 8 cm x 5 cm.
Chop the kimchi: Cut into small pieces, about 2 cm x 2 cm, so it fits easily inside the rice paper.
Slice the cheese: Cut into strips or blocks, about 5 cm long.
Heat the oil: Warm cooking oil in a pan over medium heat.
Soften the rice paper: Lightly wet one piece of rice paper with water.
Assemble: Place a spoonful of kimchi on the rice paper, sprinkle a little sugar, and add cheese.
Seal: Cover with another rice paper sheet to form a sandwich.
Fry: Place the rice paper sandwich into hot oil and fry for about 20 seconds, until golden and crispy.
Drain: Remove and place on paper towels to remove excess oil.
Serve: Enjoy hot with your favorite drink. (My preference is beer with this!)
