Mini Corn Bites – A Healthy but Buttery Late Night Snack!

Ingredients:
  • 15 baby corn

  • 15 snow peas

  • 2 oz butter

  • 1 oz salt

  • 1 oz black pepper

Instructions:

1. Prepare the Snow Peas
Bring a pot of salted water to a boil. Add snow peas and blanch for about 1 minute, just until the skins start to pop slightly. Transfer them to an ice water bath to cool quickly. Once chilled, peel open one side of each snow pea like a husk and remove the inner peas.

2. Cook the Baby Corn
In a pan over medium heat, melt the butter. Add the baby corn and season with salt and black pepper. Cook for about 3 minutes, turning occasionally, until lightly golden and aromatic. Let cool at room temperature.

3. Assemble the Bites
Slice each baby corn diagonally so they nestle easily into the peeled snow pea “husks.” Gently insert the corn to mimic tiny ears of corn on the cob.
