Ingredients
  • 8 pieces garaetteok (about 7 oz)

  • 2 skewers

  • 4 sheets rice paper

  • 1 tablespoon gochujang (Korean chili paste)

  • 2 tablespoons corn syrup

  • 1 tablespoon sugar

  • 1 teaspoon soy sauce

  • 1 teaspoon oyster sauce

  • 2 tablespoons water

  • 1 teaspoon minced garlic

Instructions

Step 1: Prepare the rice cakes
Bring a pot of water to a boil and cook the rice cakes for about 5 minutes until soft and chewy. Drain well.

Step 2: Make the sweet and spicy sauce
In a small pot, combine gochujang, corn syrup, sugar, soy sauce, oyster sauce, water, and minced garlic. Simmer over low heat until the sauce thickens, then remove from heat and set aside.

Step 3: Wrap with rice paper
Fill a large plate or shallow dish with lukewarm water. Dip each sheet of rice paper briefly until softened. Lightly oil a cutting board to prevent sticking, then wrap each rice cake with the softened rice paper to form a snug roll.

Step 4: Air-fry until crispy
Lightly brush the rice paper rolls with oil. Place in an air fryer at 380°F for 4 minutes, flip, and cook for another 4 minutes until golden and crispy.

Step 5: Assemble and serve
Thread the crispy rice cake rolls onto skewers. Generously brush with the prepared sauce before serving.

Tips for the Best Rice Paper Tteok Skewers
  • Rice cakes: Fresh garaetteok works best, but frozen rice cakes can be used after thawing.

  • Rice paper handling: Avoid over-soaking rice paper; a quick dip in lukewarm water is enough.

  • Cooking method: These can also be pan-fried in a small amount of oil if you don’t have an air fryer.

  • Spice level: Adjust the amount of gochujang to make it milder or spicier.
